Add baking powder to the flour, mix and combine with the egg mixture. Now you can only stir with a spoon or spatula from bottom to top and turning the container in a circle.


Knead a homogeneous dough, the consistency of thick sour cream. If it is liquid, then all the berries will fall to the bottom of the pie.

Line the bottom of a baking pan (preferably a springform pan) with parchment paper. You can grease the inner surface, including the sides, with a piece of butter.


Pour half of the dough into the mold and smooth it out carefully. Add strawberries. Spread the remaining dough on top so that all the berries are covered.

To ensure that the berries are located almost in the middle of the pie, place the strawberries on top of the dough. They will sink a little, and it will be just what you need.


Bake in a preheated oven at 180-190 degrees for 35-45 minutes.

After the specified time has passed, I take it out and check the baked goods for readiness using a wooden skewer. I pierce it and look - if the stick is dry, then the pie is ready, you can take it out. If there is raw dough on a wooden skewer, then the charlotte must be kept in the oven for 5-10 minutes.


The finished baked goods should be allowed to cool slightly. Only then can you transfer it to a large flat dish and decorate as desired. Here, depending on your imagination, I usually sprinkle with powdered sugar and almond flakes, lay out slices or whole strawberries, and fresh mint leaves.


For a delicious strawberry pie, I usually brew fragrant tea with herbs, or you can pour a mug of aromatic coffee or homemade cool milk.

Advice! Strawberry charlotte will turn out even tastier if you replace some of the regular wheat flour with almond flour (100 g is enough for this recipe). This flour is easy to prepare at home: the almonds are well dried in a frying pan or in the oven and ground in a coffee grinder.

In addition to sugar (130 g), potato starch and flour (40 g each), salt (on the tip of a knife) and four eggs, you will also need: 250 g of Italian mascarpone cheese, 1 tsp. lemon zest, 200 ml of cream (fat content not exceeding 40%), 110 g of powdered sugar and 30 g of coconut. To make charlotte, which is also called French, you also need to buy milk (100 ml is enough for us) and 400 g of strawberries.

Cooking method

First, let's make savoiardi cookies. Pour 80 g of sugar into a bowl, throw in a pinch of salt, as well as lemon zest. After this, take another container and, having separated the egg white into it, begin to beat it, armed with a whisk or mixer. When the whites begin to turn into white foam, start pouring sugar mixed with lemon and salt into it. Do not hurry. First, add one spoon and beat the whites a little, then add the next portion. And so on until the lemon sugar runs out. The whites should be beaten, as they say, until they form stiff peaks, that is, until they completely thicken.

After you have dealt with the whites, start with the yolks. They should be beaten for up to 10 minutes. The yolks should lighten and turn into a thick foam. When this metamorphosis occurs with the yolks, they need to be combined with the whites. After mixing the egg mass, flour and starch are added to it.

Now grab the pastry bag and go ahead and shape the cookies. They should be seven centimeters long and about 1-1.5 cm thick. The cookies are sprinkled with a little sugar and powder. Savoiardi should be baked in the oven at 180°C for about 15 minutes. To prevent them from sticking to the pan, cover it with parchment paper.

After preparing the cookies, soak them in milk and place them in a tall, round mold. Remember that not only the bottom of the mold should be covered with cookies - the savoiardi should also cover its sides. To achieve this, arrange them in a circle in a vertical position. Line the pan with cling film before placing the cookies.

Let's start preparing the cheese cream. Mix mascarpone with powdered sugar and coconut. Separately from the cheese, whip the cream and add it to the mascarpone. Our cream is ready.

Place about half of the cream on the bottom of a ramekin lined with savoiardi, and place 200 g of strawberries cut into pieces on top of it. Place the remaining cream on the strawberries, leaving just a few spoons for decoration. We hide the last layer of cream under the cookies soaked in milk. After this, the entire masterpiece is covered with cling film on top and placed in the refrigerator.

After three hours, open the charlotte and, turning it over, completely remove the film. Decorate your masterpiece with cream and sliced ​​strawberries on top.

Cooking without an oven: strawberry charlotte with store-bought sponge cake

If you're really scared or just don't want to bake anything (both pie dough and charlotte sponge cookies), then make a strawberry dessert using a store-bought sponge roll.
