Fish and chips in the oven- a great way to cook fish and a side dish for it at the same time in the form of a layered fish and potato casserole with tomatoes and cheese, juicy and aromatic.

During the cooking process, the potatoes will be saturated with the “fish spirit”, the tomatoes will give juice so that the baked dish is not dry, and the cheese will form a crust on top that will prevent the fish and potatoes from drying out. We like this dish with white varieties of fish (pike perch, pangasius, cod, haddock, halibut, etc.), you can try it with red fish and make your choice. The indicated quantity of products is designed for a large baking dish, servings for 6-8, you can do everything “in half size” if this is too much for you.

Need to:

  • Fish (fillet) – approximately 1 kilogram (we have pangasius in the photos for this recipe)
  • Potatoes – approximately 2 kilograms, maybe a little less
  • Fresh tomatoes – 2 medium-sized pieces
  • Cheese (any hard cheese of your choice) – about 200 grams
  • Mayonnaise – 3-4 tablespoons
  • Table salt – approximately 3 level teaspoons (1 teaspoon for fish and 1 teaspoon for each layer of potatoes)
  • Ground black pepper - to taste (we make 12-15 turns with a pepper grinder over fish and potatoes)
  • Seasoning for fish (any ready-made dry one from the store) – optional, about 0.5 teaspoon
  • Margarine or butter - just a little bit to grease the pan, probably 10 grams.

Preparation:

Wash the fish (fillet) with cold water, dry it lightly with napkins or a paper towel and cut into small pieces (we aim at about 3x4 or 2x3 centimeters).

Salt and pepper the fish, add fish seasoning, mix and leave to stand, “marinate” for 20 minutes.

Meanwhile, peel the potatoes, rinse with cold water and cut into thin, 2-4 mm petals: circles or, if the potatoes are large, semicircles ( watch our video recipe!).

You will get quite a lot of potato chips. We will put them in the form in two stages.

Wash the tomatoes, wipe them and cut them crosswise into thin, 3-4 mm, circles or semicircles.

Grease a baking dish with butter or margarine and place about half of the chopped potatoes in the first layer, add salt and pepper.

Place the fish pieces in the second layer.

Place a thin layer of chopped tomatoes on the fish.

Place the remaining potatoes in the next layer, add salt and lightly pepper (if desired, you can do without pepper here).

Lubricate the potato layer with a small amount of mayonnaise.

Sprinkle grated cheese on top.

Place the dish with our fish and potato casserole in a preheated oven at medium height on a baking sheet or on a wire rack.

Bake at a temperature of 180-190 degrees (this is the average heating level) for 40-50 minutes. The time depends on the features of your oven. We remind you again: if you are using a heat-resistant glass dish, it is recommended to place it in a cold oven, then turn on the heat; accordingly, the cooking time will increase by 10-15 minutes (the time needed to warm up the oven). We determine readiness not only by time, but also by color: the cheese has melted, “grabbed” with a light crust and acquired a golden color, beginning to brown in places. This means our baked one is already ready. Cut into portions with a spatula directly in the mold and place on plates while hot. If you like the result (which we really hope for), we recommend trying another method and baking. The side dish, however, will have to be prepared separately, but the fish turns out amazing.

  • 3 Let's return to the fish again: sprinkle it with salt and pepper, you can add a little Khmeli-Suneli or seasonings for fish dishes - to your taste. Place our fish on greased foil. Place prepared vegetables around and on top of the fish.

  • 4 Now our task is to wrap the fish and potatoes in foil so that during baking the juices from the fish and vegetables do not leak onto the baking sheet.

  • 5 Bring opposite corners of a sheet of foil together and pinch them together to form a compact pouch.

  • 6 Now place the foil packet on the baking tray. Fish and potatoes are baked in the oven at 200° for an hour. Halfway through the process, open the oven and turn the bag over (make sure the “seams” are not on the bottom!).

  • 7 After an hour, remove the bag from the oven and carefully (so as not to get burned!) unfold the foil.

  • 8 Sprinkle a little grated cheese over the fish and chips and, without wrapping them again, place in the oven for a further 5 minutes to melt the cheese slightly.
