Ingredients:

  • Potatoes - kilogram.
  • Selected egg – 1 piece.
  • Wheat flour – 100 grams.
  • Butter – 40 grams.
  • Breading – 2 tablespoons.
  • Vegetable oil – 1/2 cup.
  • Minced meat – 300 grams.
  • Onion - head.
  • Champignons – 6 pieces.
  • Salt and spices according to preference.

Cooking process:

1. Pre-clean and wash the potatoes. Be sure to cook with the old one because it contains more starch. We cut it into four parts, pour in water and put it on the fire to cook until fully cooked.

2. Peel the onion and chop it into small pieces.

3. Wash the champignons thoroughly and cut into small cubes.

4. Place a frying pan on the fire, add vegetable oil and fry until golden brown.

5. Then add the mushrooms to the onions and simmer over low heat until all the liquid from the mushrooms has evaporated.

6. Add fatty minced meat and mix continuously until the ingredients are completely cooked.

7. When the potatoes are cooked, drain all the water and mash.

8. Let the potatoes cool slightly, then beat in the egg, add butter and continue kneading until thick, homogeneous and smooth.

9. Add salt and pepper to taste.

10. Add 2 tablespoons of wheat flour to the resulting puree and knead the potato dough. Flour will give the mashed potatoes stickiness and make it possible to form zrazy of the desired size.

11. Wet your hands in water, then make a thick cake from the potato dough. Place the cooled filling of minced meat, mushrooms and onions in the middle. Carefully cover the filling on all sides and form a pie.

12. Roll the potato pie in breadcrumbs.

13. Pour vegetable oil into a frying pan and heat until bubbling. Fry the pre-formed zrazy over low heat until fully cooked.

Do not cover the pan with a lid to ensure a golden brown crust.

Preparation:

  1. First, let's cook the potatoes. While the water is heating up, peel, wash, and cut the potatoes into 4 pieces so that they cook faster. Place in boiling water, add salt and cook over medium heat for 10-15 minutes.
  2. At this time we are working on minced meat and mushrooms. We clean the onions, carrots, mushrooms, wash them and chop them. Place onions and carrots in a preheated frying pan with a small amount of oil, quickly fry them and add minced meat. Fry everything together for about 5 minutes, then add finely chopped mushrooms. Everything is fried for about 5 more minutes. Don't forget to stir in time.
  3. Now add salt and pepper, cover with a lid and let simmer over low heat for another 10 minutes.
  4. The potatoes should be ready by now. Drain all the water, mash the potatoes and let them cool a little. Break the eggs into the warm potatoes and mix thoroughly. If desired, add some salt, but I don’t do this, since the potatoes have already been salted, the minced meat too, and the gravy will be quite salty.
  5. While we were preparing the base for the zraza, the minced meat was prepared. Open the frying pan; if there is any liquid left, evaporate it or, squeezing it well with a spoon, place the minced meat with mushrooms on a dry plate. Let it cool so your hands don't get hot.
  6. Take the potato mixture a little at a time, like dough for pies, knead the flatbread directly on your hand (to prevent it from sticking, moisten your hands with water). Place the filling there with a teaspoon. We secure the edges (also like pies) and press them down.
  7. Place potato zrazy with minced meat in a heated frying pan with oil and fry over high heat until golden brown on both sides.
  8. When all the zrazy with potatoes and minced meat are removed from the frying pan, pour the flour directly into the same oil, fry it and pour in the sour cream, adding salt in advance. Leave on low heat under the lid for 5 minutes. If there is cheese in the house, I definitely add it.   3. Remove the potatoes from the heat and mash them well, draining all the water. When the potatoes have cooled a little, break the eggs into them and add flour. Mix thoroughly and add a little more salt (you don’t have to do this, to taste).
  4. Let the minced meat cool a little and start modeling right away. While it cools, you can finely grate the cheese and chop the herbs. I like to add dill and chives to the filling, but if you don't like that, then this step is optional.
  5. Take a ball of potato dough to fit in your palm. We turn it into a flatbread and put some minced meat on it, sprinkle with herbs and grated cheese, pinch the edges and shape it into an oblong pie.
  6. Immediately place the potato zrazy with minced meat in a heated frying pan with vegetable oil and fry on both sides until beautifully golden brown.
  7. These zrazy are best served warm and can even be served without sour cream, since thanks to the melted cheese inside they are already juicy and tasty.

The main thing is to follow a few rules, and everything will work out for you:

1) Simply boil the potatoes in salted water and mash until smooth, without adding milk. Do not use a blender under any circumstances, because the result will be an airy puree that will be difficult to shape, and we need a homogeneous potato mass.

2) I never add an egg, in my opinion, it only thins the mass. To hold the dough together, I stir in a little flour.

3) Fry the minced meat until half cooked so that it remains juicy. If you bring it to the crust, it will be a little dry in the filling. When frying immediately, the minced meat will undergo heat treatment again and will not be raw at all. For juiciness, you can add overcooked carrots and onions to it.

4) Bread the cutlets in breadcrumbs. It doesn't matter whether you bought them or prepared them yourself at home. The main thing is that they will perfectly help keep the shape and prevent the “pie” from falling apart.

  • potatoes (large tubers) – 4-5 pcs;
  • assorted minced meat (beef + pork) - 250g;
  • onion – 1 piece;
  • flour - 3 tbsp;
  • breadcrumbs - 6 tbsp;

Inside there is a juicy filling of mushrooms and minced meat. We take any mushrooms, today we have champignons, and we prepare our zrazy with them. This time I made minced meat from chicken breast, but this is not important, any other stuffing can be an excellent filling.

What we need:

  • potatoes - 5 pcs.;
  • egg - 1 pc.;
  • flour - 2 tbsp;
  • onions - 2 pcs.;
  • mushrooms – 200g;
  • minced chicken – 200g;
  • salt - 0.5 tsp;
  • ground pepper - 0.5 tsp.

How to make potato zrazy with minced meat in the oven

  1. Peel the potatoes, cut into small pieces and boil in salted water. While the potatoes are cooking, prepare the remaining vegetables. Peel the onion and cut into small cubes.
  2. Pour sunflower oil into the frying pan, heat it, add the onion to the frying pan. Fry over low heat.
  3. Minced meat is usually prepared by twisting the meat through a meat grinder, but for the first time I suggest chopping the chicken breast with a knife (however, this is not important). By the way, even before the advent of meat grinders, meat was chopped with a sharp knife until it became minced meat. Everyone chooses their own method of preparing it.
  4. The onion is fried, add the meat. If you minced it through a meat grinder, then mix it well in the frying pan so that no lumps form. With minced meat, lumps are easier to avoid.
  5. Wash the mushrooms in cold water, clean them, remove the film on the caps. Chop the champignons.
  6. Transfer them to the frying pan with the rest of the filling ingredients. Salt to taste, and pepper if desired. Simmer everything together for 5-7 minutes.
  7. The potatoes are boiled, drain the water and puree them.
  8. Add flour and salt.
  9. Knead the potato dough.
  10. We form zrazy. Pour flour onto a cutting board. Take the potato dough with a spoon and knead it into a flat cake.
  11. Place 1-2 teaspoons (depending on the size of the piece) of filling in the middle of the flatbread.
  12. Connect the edges of the flatbread and shape it into a cutlet.
  13. Sprinkle the zraza blank with a little flour.
  14. Such preparations can be fried in vegetable oil, but we will bake them in the oven. Take a baking dish, cover it with paper, foil or a baking sleeve. If you don’t have anything on hand, simply grease the bottom of the mold with sunflower oil. Place the pieces in the mold at a distance of 2 centimeters from each other.
  15. Beat one egg and brush the top of the zrazy with it. Place the pan in the oven to bake for 40-45 minutes at a temperature of 170-180°C.

Remove the finished potato zrazy from the oven. Set aside to cool slightly. Serve warm zrazy with sour cream or other sauce.


If the dish is not eaten immediately, then on the second day it is heated in the microwave and it remains as tasty, soft and fluffy as the day before.

  • minced beef - 200 gr.
  • carrots - 1 pc.
  • onion - 1 pc.

Preparation:

1. I prepared the minced meat myself, so along with the meat I twisted a small onion and a small carrot. Whenever you grind meat, some of it remains in the grinder. And in this way, the meat is all twisted, without any residue, and the minced meat turns out more tasty.

2. Now you need to salt and pepper the minced meat and add your favorite spices. I always add ground coriander and cumin to the meat (just add as much as you need in a mortar), always nutmeg on the tip of a knife and chopped dried herbs - basil, dill, parsley.

3. Mix the minced meat thoroughly, add a tablespoon of any broth, be it vegetable, chicken, or meat. And if there is no broth, it doesn’t matter... we won’t cook it for one spoon. Just add a spoonful of warm boiled water.

4. Potatoes should be peeled and washed. The average consumption is as follows: for one cutlet - one fairly large tuber.

5. Wipe the peeled vegetables with a paper towel and grate them on a medium grater. I rub three pieces at a time, because... I only fit three zrazy in the frying pan. There is no need to grate anymore, firstly, the potatoes quickly darken, and secondly, they produce a lot of juice and starch. But we don’t want all the deliciousness to leak out. Therefore, we grated three pieces and immediately fried them.

6. Salt the mixture and stir.

7. While we are working on potatoes, our frying pan with oil should already be hot. Place it on low heat; the oil will not burn, but will only heat up as it should. Pour in just a little oil, just enough to barely cover the pan.

8. Now we take the grated mass into our palms, squeeze it slightly, and form a flat cake about 1-1.5 cm thick on our palm. Place a heaping tablespoon of minced meat on the flatbread. Distribute it in a thin layer over the entire cake.

9. Now with your free hand we take some more grated potatoes, squeeze out the juice just a little and cover the minced meat, forming a flat cake on top.

10. Using both hands, we form a cutlet (somehow I can’t turn my tongue to write “immediately”), and immediately place it in a hot frying pan with oil

11. We do the same with two more zrazas.

12. Fry on each side for an average of 7 minutes.

13. If there is no oil at all in the frying pan, the potatoes can take it all, add just a little bit under each cutlet.

14. When ready, place the fried zryzy on a plate, always on 4 layers of paper towels so that all excess oil drips off.

15. Readiness is immediately determined very easily. When each side is a nice brown color, it's cooked through, both inside and out.

16. In order not to waste time, when one side is fried and you turn it over to the other side, you can grate the 3 remaining tubers.

17. We also fry them and place them on a paper towel.

18. Cover with a high-sided lid. Microwave cover works well. It is high and the eyes will not stick together in it, because they still need to lie down for at least 5-7 minutes.


For a side dish, I cooked pearl barley porridge, but in principle, you can cook any side dish.

By the way, take note - zrazy can be prepared with different fillings. You can cook them with mushrooms and cheese. They are very good with eggs and minced meat. If you are not a fan of fatty foods, or for some reason, you do not eat fried foods at all, then you can not fry them in a frying pan in oil, but simply bake them in the oven.

Today I will share with you a recipe for a very popular dish in all countries of Eastern Europe, mostly Belarus, Poland and of course Ukraine - potato zrazy. They are made with various types of fillings, with mushrooms, liver, and meat. I will cook traditional potato zrazy with minced meat. I first tried this dish when I was a virgin, and since then zrazy has become one of my favorite dishes. Somehow it so happened that I cook zrazy very rarely, so I will try to correct this misunderstanding :) and together with you prepare simple traditional zrazy with minced meat.

In principle, I am a lover of all potato dishes; I am surprised by the simplicity and simultaneous originality of all the dishes that can be prepared from this popular product in Belarus - potatoes. I recently cooked, you see, it sounds quite simple and ordinary, but when you try this dish, you will once and for all send your opinion further :).

Okay, let's get back to potato zrazas with minced meat; to prepare this dish we will need the following ingredients:

    • Minced pork 500 grams.
    • Potatoes 5-7 pieces.
    • Onion 1 piece.
    • Garlic 3 cloves.
    • Egg 1 piece.
    • Wheat flour 200 - 300 grams.
    • Salt and pepper to taste.
    • Olive oil.
    • Breadcrumbs.

How to cook potato zrazy with minced meat?

First, let's prepare the main ingredient for this dish - potatoes. We will peel it, wash it, and finely cut it into cubes for further cooking. Place a pan of water on the stove, bring to a boil, and add the potatoes to the boiling water. We will cook the potatoes until they are fully cooked, the time depends on the type of potato and how young it is. As soon as the potatoes are boiled, drain the water and use a potato masher to make a puree. Next, break the egg into the puree and mix thoroughly. Then salt and pepper the potatoes and gradually add flour, the amount depends on how much the potatoes stick to your hands. Once the potato dough is kneaded, set it aside to cool.

Next, let's get to the filling, first peel the onion and garlic and finely chop it into cubes. Since we need to fry the onions, take a frying pan, pour oil into it, and add the onions and garlic to it for further frying. Fry until golden brown, stirring the onion occasionally.

As soon as the onion is ready, add minced meat, salt, a little pepper, fry until the minced meat is completely cooked. If there is not enough oil in the pan, you can add a little more.

When the filling is ready, set the pan aside and completely cool the minced meat to room temperature. Now let's get down to forming the most important elements. To do this, dip your hand in some water, we do this to reduce the sticking of the dough to our hands, put minced meat inside, and roll the potatoes into a cutlet shape.

Next, we roll out the potato zraza in breadcrumbs, which will give them a golden, beautiful crust when further frying the zraz.

Now we will fry potato zrazy with minced meat, for this we take a frying pan, pour a little olive oil, and over medium heat we will fry the zrazy on both sides until golden brown.
