Unpretentious in heat treatment (I think that champignons can generally be eaten raw), stunning dishes are obtained from “store” mushrooms.

I share a couple of recipes for nutritious, quick to prepare and very tasty mushroom salads.

How to choose the right ingredients

  • You can use any mushrooms for salad - forest or "store", oyster mushrooms, champignons.
  • For mushroom salad with tomatoes, it is better to choose sweet and dense varieties of tomatoes, for example, Black Prince or Pineapple.
  • If the recipe in the mushroom appetizer provides for mayonnaise, it can be safely replaced with sour cream. The taste will change, but in no case will it deteriorate.
  • Cheese is suitable only for hard varieties - Dutch, Poshekhonsky, salty Russian or neutral in taste, such as sour cream.

Ingredients:

  • Carrots - 4 pcs.
  • Mushrooms - 500g.
  • Veal meat or tongue - 200g.
  • Onion - 2 pcs.
  • Sugar - 2 tbsp. l.
  • Vinegar - 2 tbsp. l.
  • Salt - to taste
  • Pepper - to taste
  • Vegetable oil - for frying
  • Mayonnaise - for dressing
  • Sour cream for frying mushrooms

Cooking:

Chop the carrot into small cubes. Fry until soft or boil the whole and then cut. Onion 1 pc. cut into small cubes with mushrooms, fry everything, add sour cream at the end and simmer until moisture evaporates.

Mix vinegar, sugar, pour boiling water and marinate the onion in the resulting sauce for 15 minutes. Drain the marinade.

Boil the meat, after cooling, cut into cubes. Mix onions, carrots, peas, meat and mushrooms, season with mayonnaise, salt and pepper to taste.

Helpful Hints: How to fry mushrooms

  • Mushrooms, like a sponge, absorb moisture, so they should not be in contact with water for a long time before cooking, so that they do not become tasteless and watery. Mushrooms grown in a greenhouse are practically sterile.
  • Do not use olive oil for frying mushrooms - when heated, it loses its beneficial qualities; refined sunflower oil is best for frying.
  • Mushrooms are delicious when fried with onions. Then the mushroom taste in the salad will be pronounced, and the mushrooms themselves will be very juicy.
  • Finely chop the onion and sauté it in a hot oiled pan. For 400 grams, one tablespoon of oil will be enough. Fry the onion for 3-4 minutes until golden brown, and then add chopped mushrooms to it.
  • Do not cut the mushrooms very finely, otherwise they will simply “get lost” in the salad when cooked. Mushrooms need to be fried for 8-12 minutes, stirring; this product contains a lot of liquid. In finished form, the number of mushrooms from the initial one will decrease by about half.
  • Salt and pepper mushrooms at the very end of cooking.

Liver and cheese salad


Ingredients:

  • Chicken or beef liver - 350 g.
  • Champignons - 15 pcs.
  • Medium size potatoes - 4 pcs.
  • Dutch cheese - 170 g.
  • Sunflower oil - 40 ml.
  • Mayonnaise - for coating layers.
  • Eggs - 3 pcs.
  • Carrot - 1 pc.
  • Onion - 3 medium heads.
  • Salt.
  • Black pepper freshly ground.

Cooking:

Rinse potatoes and carrots. Put a pot of water on the stove, boil, add salt and put the vegetables into boiling water. Boil until ready. This will take about half an hour.

Cool boiled vegetables, peel, grate on a coarse grater.

Peel the onion, chop into thin half rings. Grate cheese on a coarse grater.

Boil hard-boiled eggs, free from the shell, chop on a coarse grater. Clean the mushrooms, cut into slices.

Heat up a frying pan, pour in vegetable oil, fry half of the onion slices on it until golden brown, then add the mushrooms. Cook for ten minutes.

Rinse the liver, cut out the veins and remove the film, dry, cut into medium pieces.

Fry the rest of the onion in a pan, then add the liver to it, simmer until cooked. It will take about seven minutes to cook the liver. In the process of frying, it must be seasoned with pepper and salt to taste. Remove from fire, let cool.

Now it remains to fold the dish in layers.

On the bottom of a flat wide plate, lay a layer of grated potatoes, then mushrooms with onions, coat with mayonnaise. Next comes meat with onions, grated carrots, mayonnaise. Sprinkle all this with plenty of cheese, coat again with mayonnaise and decorate with a grated egg on top.

Salad with chicken, mushrooms and walnuts



Ingredients:

  • Chicken fillet - 150 g
  • Eggs - 2 pcs
  • Mushrooms - 100 gr
  • Onion - 1 pc.
  • Cheese - 100 g
  • Garlic - 2 cloves
  • Walnuts - 50 g
  • Mayonnaise - to taste

Cooking:

Finely chop the onion. Boil mushrooms in salted water for 15 minutes. In a hot frying pan, fry mushrooms with onions in vegetable oil. Cool down.
Boil the fillet until cooked, cool and finely chop.
Boil eggs and grate.
Squeeze the garlic through a press. Grate the cheese. In a bowl, mix cheese, garlic with mayonnaise.

Lay out the lettuce in layers.
1 layer (bottom) - fillet (grease with mayonnaise)
2 layer - eggs (grease with mayonnaise)

Ingredients:

  • Chicken heart 0.5 kg,
  • Eggplant 5 pcs.,
  • Bulgarian pepper 3 pcs.,
  • Cheese 150 gr.,
  • Fresh tomato 4 pcs.,
  • Champignon mushrooms 5 pcs.,
  • Mayonnaise 250 gr.,
  • Garlic cloves 3 pcs.,
  • Onion 1 pc.,
  • Sour cream 250 gr.

Cooking:

We defrost the chicken heart, also wash it and fry in a deep frying pan, salt, throw spices and bring to readiness. Then let cool and grind in a food processor to medium crumbs.

Finely chop the onion and mushrooms. Fry the mushrooms and onions, adding a little butter, add a little salt.

Eggplant should be cut into cubes and fried in vegetable oil until tender, salt. To keep the cubes intact, they need to be fried open and over high heat, stirring occasionally. Let cool.

Peel the bell pepper, then remove the seeds and cut into cubes, then fry over high heat, stirring constantly.

  • - prunes - 100 g
  • -mayonnaise
  • -greens

Cooking:

Preparation of salad with chicken fillet and mushrooms Birch Grove:
Boil the chicken fillet until tender in salted water. Hard boil eggs. Soak prunes in warm water and leave for 10-15 minutes.

Then drain the water and dry the prunes. Finely chop the onion. Mushrooms
cut into cubes or strips. Fry the onion in vegetable oil, then add the mushrooms and fry together for ~7-10 minutes, salt and pepper.

  • canned corn - 400 g;
  • chicken fillet - 300 g;
  • chicken egg - 3 pcs.;

  • mayonnaise - 150 ml;
  • chips - 50 g;
  • salt;
  • spices (curry, pepper mixture) to taste;
  • greens - 5-10 g;
  • olives optional.

Cooking:

Boil the eggs, wait until they cool, peel and three on a large grater.

The onion must be carefully peeled, then cut as small as possible and fry until golden brown in a frying pan in sunflower oil.
Mushrooms, wash and cut. Then they should be lightly fried in a frying pan in sunflower oil, after adding spices and salt. Peeled carrots must be rubbed on a coarse grater and also fried in oil.
Chicken fillet will need to be cut into small cubes and fried in a pan with spices, salt and vegetable oil. The fillet will take about ten minutes to cook.
All prepared fried ingredients must be cooled before forming the salad.

Sunflower salad is laid out in layers:

  1. chicken;
  2. carrot;
  3. mayonnaise;
  4. mushrooms;
  5. fried onions;
  6. mayonnaise;
  7. grated eggs.
  8. mayonnaise;
  9. corn.

Please note: corn should cover the entire salad.

The final step is laying out the chips around the dish, making the "petals" of our flower. If desired, you can show your imagination and decorate the salad with herbs and olives as well.

It is called so because, for unknown reasons, it “flies away” from the table first at the feast, and well-fed and satisfied guests try to get the cherished recipe from the hostess.


Ingredients:

  • Turkey liver - 450 gr.
  • Champignons - 200 gr.
  • Large onion - 1 pc.
  • Large carrots - 1 pc.
  • Egg - 3 pcs.
  • Processed cheese - 1 pc.
  • Mayonnaise - 250-300 gr.
  • Olive or sunflower oil - 2 tbsp. l (for frying)
  • Pickled cucumber - 1 pc.

Cooking:

Boil the liver until fully cooked (15-20 minutes). Add salt and spices to the broth. We take it out, put it to cool. When the liver has cooled, we rub it on a coarse grater.
We boil the eggs.
Mushrooms are cut into thin sticks and lightly fried in a minimum amount of oil.
We clean onions and carrots. We chop the onion into small cubes, and three carrots on a grater (large or small - as you like).
Lightly sauté the onion, add the carrots and bring the vegetables to readiness.

The ingredients needed to prepare the salad are ready.

Now you can collect "Fly away" by layers:

  1. layer - hepatic. Add 3 tbsp to the mashed liver. mayonnaise, mix well. Spread in an even layer on a large flat salad bowl.
  2. layer fried vegetables in a separate plate on a paper towel to get rid of excess fatty oil).
  3. layer - mix mushrooms with a couple of tablespoons of mayonnaise and spread on a layer of vegetables.
  4. For the next layer, rub the cheese on a fine grater and combine it with 2 tbsp. l. mayonnaise. Put the resulting mixture on the mushrooms.
  5. layer - egg. Three eggs on a coarse grater and sprinkle the cheese layer.
  6. Cut the cucumber into thin circles and lay on the sides of the salad. Let's brew for an hour.

Salad "Tenderness" with chicken and prunes


Ingredients:

  • fresh champignons - 300 g
  • chicken fillet - 300 g
  • eggs - 5 pcs
  • pickled cucumber - 2 pcs
  • prunes - 120 g
  • olives - 100 g
  • carrots - 1 pc.
  • spicy grated cheese - 100 g
  • green onion - ½ bunch
  • dill - 1 bunch
  • olive oil - 5 tbsp

Cooking:

Rinse the chicken, pat dry with paper towels and remove the skin. Boil the meat until tender in water with salt and spices, then remove and cool very well.
Wash mushrooms and cut into slices. Fry in olive oil until soft and set aside.
Boil eggs and carrots and cut into cubes. Finely chop cucumbers, dill and onion.
Remove the olives from the brine and cut into halves.
Rinse prunes and steam in boiling water to become soft. Then chop coarsely.
Put all the ingredients on a serving plate in this order: chicken + mushrooms + onions + carrots + prunes + olives + cucumbers + chopped eggs. Lubricate each layer generously with mayonnaise.
Sprinkle the top of the salad with grated cheese, herbs and send the dish for a couple of hours in the refrigerator to soak, then serve.

Mushrooms go well with vegetables and meat, and therefore are an integral part of a variety of salads. Preference is given to champignons, honey mushrooms, oyster mushrooms and porcini mushrooms, each of which can be used for cooking in any form - even fried, even marinated, even fresh. Hearty snack with beans

This appetizer is prepared in a short period of time. Salad with beans and mushrooms can be prepared for the winter or just for daily use.

For cooking you will need:

  1. A glass of beans.
  2. Any mushrooms at will - 400 g.
  3. One bulb is small.
  4. Two carrots.

Getting Started:

  1. A glass of beans should be soaked for 2-3 hours in cold water, and then boiled until ready.
  2. Carrots are rubbed on a grater, onions are cut into half rings, vegetables are fried in a hot frying pan with the addition of oil.
  3. Mushrooms are cut into pieces of arbitrary shape, sent to vegetables and continue to fry for another 20 minutes.
  4. After the mushrooms are ready, they are placed in a deep container, the finished beans are added and ground with a blender to a homogeneous structure. It turns out mushroom pate.

Salad with fried mushrooms and chicken

Ingredients used:

  1. Fillet of chicken breast - 300-400 g.
  2. Cheese - 300 g.

Original version with squid

Ingredients (for 4 servings):

  1. 3-4 medium-sized squid carcasses.
  2. 200 g grated cheese;
  3. Mushrooms - 300 g.
  4. Onion head - 1 pc.

Squids are boiled in boiling water for 2-3 minutes, then cut into half rings.

It is important not to overcook the seafood, otherwise it will become tough and almost inedible.

Mushrooms and onions are sautéed and cooled. Spread the contents of the pan, squid and grated cheese into the container. Salt and pepper as desired, add mayonnaise.

Salad "Polyanka"
