Cover the finished yeast dough for bagels with a towel and leave in a warm place for 1 hour. After this time, it will be possible to work with it. During this time the dough will double in volume. Wrap it with your hands. Sprinkle the table with flour. Tear off the dough, about 200 g. Using a pastry rolling pin, roll it out into a thin layer. Using a lid from a pot or frying pan with a diameter of 20 cm or more, cut out a circle.

Cut the resulting circle into sectors with a sharp knife. The end result is these triangles.

Place a drop of jam (jam or preserves) on the wide edge of each triangle. In this recipe for bagels made from yeast dough with jam, I used homemade pear jam. You can use any jam that you have in the house or thick jam or confiture to make yeast bagels.
