There were many places to choose from. I chose two premises in the central part of the city, at a small distance from each other. One room had an area of ​​24, the other - 28 square meters. The repairs in both rooms were good, and I only had to arrange with the landlord to repaint the walls to my standard. The owner of the building allowed me to do this.

The space issue has been resolved. I left a deposit and agreed that I would start renting the premises from the 1st. I took this step in order not to pay extra money for rent while the equipment is being purchased.

Without industrial espionage in our time nowhere

Half of what I needed from the equipment was sold to order, and some had to wait up to two weeks for delivery. I ordered equipment, furniture, utensils and inventory - and started mastering the recipes.

The cost of one serving of shawarma includes the cost of products such as meat, chicken, cheese, pita bread, in which it is wrapped, vegetables that are added to shawarma, sauces, packaging, napkins. Also, of course, the electricity that is used for its preparation is taken into account. If we calculate the average cost of all these elements, then the average cost of one serving of shawarma in 2018 is 37-40 rubles, which is not very much. It turns out that the markup per serving is 110 - 200% (depending on the selling price). The selling price of one serving of shawarma in my stall was 100 rubles.

To pay back all my monthly expenses, I need to sell goods for 90,000 rubles from one point. This makes 900 servings. We divide this value by 30 days and we get that per day, one point must sell at least 30 servings of shawarma. Selling 30 portions of shawarma a day is only payback for rent, chefs' salaries and electricity bills - a break-even point. I have not yet included quarterly deductions and taxes, as well as accounting fees in this amount.

After all the calculations, a plan for daily sales was determined - 75 servings of shawarma.

I will reveal a little secret that I discovered while observing the buyers. Those who do not have enough money pay attention to a large portion of shawarma. Simply put, a large and delicious-smelling portion attracts only the hungry, and they have no money. And it seems to me that a hungry cook came up with such a portion. You can perfectly eat it on the beach, or at home, but not on the street, where there is nowhere even to wash your hands.

People who are in the central part of the city prefer to go to a cafe and pay a little more to avoid the possibility of getting their clothes dirty. Moreover, it will be a tragedy for a girl if she gets her blouse or dress dirty.

For greater effect, I decided to increase the content of meat products in a serving by 15%. Lettuce leaves were also added to the mini portions - to give freshness. Another innovation was to season shawarma with lemon juice. A slight sourness added spice to the finished dish.

Expansion of the range of points. Shawarma for all tastes, even for vegetarians

Another decision was to diversify the portions and add shawarma with chicken, cheese and mushrooms, with smoked chicken, with the addition of fried bacon to the menu. For vegetarians, a variant of shawarma with grilled eggplant and mushrooms was offered. To do this, I had to purchase a brazier, install it in a room with all fire safety requirements. This procedure cost me another 18,000 rubles.
